* 1 scant tablespoon yeast&lt;br /&gt;
* 1 cup water&lt;br /&gt;
&lt;br /&gt;
Mix and let foam 5-10 minutes.&lt;br /&gt;
&lt;br /&gt;
Mix in&lt;br /&gt;
&lt;br /&gt;
*1 tablespoon EVOO&lt;br /&gt;
* 2.5 cups flour.&lt;br /&gt;
&lt;br /&gt;
Scrape dough out of bowl and onto the counter. Knead in 1/2 to 1/3 cup flour until smooth and elastic. &lt;br /&gt;
&lt;br /&gt;
Separate into  (two?) oiled bowls and allow to proof (rise) until desired size and softness.&lt;br /&gt;
&lt;br /&gt;
Roll each ball into pizza crust.&lt;br /&gt;
&lt;br /&gt;
