&lt;p&gt;&lt;b&gt;New page&lt;/b&gt;&lt;/p&gt;&lt;div&gt;1.Break two eggs into a bowl. Stir until the eggs are somewhat broken up. &lt;br /&gt;
&lt;br /&gt;
2.Add a dollop of creme fraiche or some milk. Whisk side to side vigorously until the eggs are smooth.&lt;br /&gt;
&lt;br /&gt;
3.Add a dollop of butter to the egg mixture. DO NOT ADD SALT UNTIL AFTER PUT ON PLATE.&lt;br /&gt;
&lt;br /&gt;
4.Preheat a non-stick skillet to medium heat.&lt;br /&gt;
&lt;br /&gt;
5.Pour the eggs into the pan. Let set for 2-3 seconds, then begin gently stirring.&lt;br /&gt;
&lt;br /&gt;
6.Once curds begin to form, pull the skillet from the heat. Continue stirring until no more curds appear.&lt;br /&gt;
&lt;br /&gt;
7. Place back on heat and repeat step 6 until reaches desired texture.&lt;br /&gt;
&lt;br /&gt;
8.Put on plate and enjoy.&lt;/div&gt;</summary>
