Ingredients
- 1 bunch of baby Lacinato kale (dinosaur bubble kale), julienned (extremely thinly sliced), leave spine for flavor and fiber
- the kale is one of the key ingredients: it should be dark, green, crunchy, and fresh
- 1 shallot, extremely thinly sliced and separated (little rings), so that the shallot rings are evenly distributed amongst the kale
- ~3 oz goat cheese, crumbled
- the goat cheese is the second most important ingredient: get the freshest cheese you can for the best flavor!
- 1 peeled grapefruit, carefully diced
- Handful of chopped walnuts, toasted in a pan
- Avocado (optional)
- Thinly sliced red or green apple (optional)
- Pomegranate seeds (optional)
Hold out the walnuts, mix the other ingredients, then add the walnuts, while still hot, to soften the goat cheese.
