* 1 bunch of baby Lacinato kale (dinosaur bubble kale), julienned (extremely thinly sliced), leave spine for flavor and fiber
* 1 shallot, extremely thinly sliced and separated (little rings)
** the kale is one of the key ingredients: it should be dark, green, crunchy, and fresh
* 3 oz goat cheese, crumbled
* 1 shallot, extremely thinly sliced and separated (little rings), so that the shallot rings are evenly distributed amongst the kale
* 1 peeled grapefruit, diced
* ~3 oz goat cheese, crumbled
* toasted walnuts, chopped
** the goat cheese is the second most important ingredient: get the freshest cheese you can for the best flavor!

  • 1 shallot, extremely thinly sliced and separated (little rings), so that the shallot rings are evenly distributed amongst the kale
  • ~3 oz goat cheese, crumbled
