Grammy’s Method: Place eggs (61-63 grams) in medium steamer basket. Heat water till steaming. Put steamer basket on pan; turn the heat to medium to keep the water at a bare simmer. Cook until egg timer reaches soft or desired level (about 6 min 15 s). Remove eggs from the water with a slotted spoon and briefly dunk in ice bath. Set eggs in egg cups. Whack the top of the egg off with a small knife. Eat out of the shell with the egg spoons.
