Laurel's kale salad

Ingredients
- 1.5 head baby lacinato kale (dinosaur bubble kale), julienned
- 1 shallot, extremely thinly sliced and separated (little rings)
- 3 oz goat cheese, crumbled
- 1 peeled grapefruit, diced
- toasted walnuts, chopped
Hold out the walnuts, mix the other ingredients, then add the walnuts, while still hot, to melt the goat cheese.
Add dressing of your choice (recommend a vinaigrette)
Massage the salad with bare (washed) hands to get everything evenly coated. Nitrile gloves for the faint of heart.
