Quinoa over shaved asparagus

Ingredients
- 8 oz asparagus, think shaved
- 3/4 cup quinoa
- 4 lemons
- 1/3 cup craisins
- 1/4 cup diced red onion
- 1 green pepper, diced
- 3 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 small jalapeno, seeded and diced
- 2 cloves diced/minced garlic
- 1/4 cup toasted, sliced almonds
- Feta to taste
Instructions
- Mix asparagus, juice of one lemon, salt, olive oil, salt and pepper to taste. Let stand 10-20 minutes so the lemon can soften the asparagus.
- Cook quinoa, mix with green pepper,jalapeno, almonds, craisins, garlic, remaining lemon juice, garlic, salt and pepper to taste.
Serve asparagus topped with quinoa. Top with feta to taste.
Goes well with Pan-grilled salmon and mango pico de gallo
