Bananas Foster

Serves 4
  • 2 shots rum
  • 2-3 tbsp butter
  • 3 tbsp brown sugar
  • 1 tsp cinnamon
  • molasses (optional)
  • 2 bananas, sliced in half long, and again short
  • Vanilla ice cream
  • Butane torch or lighter
  • Bacardi 151

Mix the first 4 ingredients in a skillet on medium high until the brown sugar is dissolved. Flavor to taste. A few drops of molasses may be added to improve the nose, especially if using light brown sugar. Add the bananas and cover them with the sauce repeatedly, cooking them down until soft.

Presentation

Have the ice cream scooped and ready in bowls (don't use cups or ramekins: you need room for the bananas!) Have the guests seated in front of their ice cream. Have the torch ready. The rest will be over in seconds: douse the sauce with Bacardi 151 while your back is too the guests. As you prepare to turn around, light the torch or lighter at the lip of the skillet. Do these in quick succession as the alcohol vaporizes quickly: the longer you wait, the bigger the fireball! The flames will subside over 10-20 seconds as you present the flambe. Using an non-slotted serving spoon, quickly drop two banana pieces and some sauce on each guest's ice cream.
