Ingredients

  • 1 1/4 Cup flour
  • 1/4 Teaspoon Salt
  • 3 Large eggs
  • 1 1/4 Cup milk
  • 2 Tablespoons unsalted butter, cut into 6 even pieces
  • 1 Tablespoon unsalted butter, melted

Directions

  • Yield : 6 Popovers
  • Use Oil or use 100% oil nonstick spray to grease the popover pan. Preheat oven to 400°F, with the rack in the center position. Preheat the popover pan in the oven for about 2 minutes.
  • Blend flour, salt, eggs, milk, and melted butter until the mixture is the consistency of heavy cream, about 1 - 2 minutes. Use a food processor, blender, electric or hand mixer to blend. The batter can be made ahead of time and stored in the refrigerator, but should be used at room temperature.
  • Place one small piece of butter in each cup of the pan and place the pan back in the preheated oven until the butter begins to bubble, about 1 minute.
  • Remove the pan from the oven and fill each cup half full with batter and bake for 15 minutes. Reduce oven temperature to 300°F, rotate the pan front-to-back and bake an additional 15 minutes and check: may need another 5 minutes.
  • Popovers are best when served fresh from the oven. Serve with butter, jams, or other sweet or savory spreads.
