Rhubarb Pie

Crumb:

  • 1 cup wheat flour
  • 5/8 cup sugar
  • 1/2 cup butter
  • 1/3 cup chopped almonds

Filling:

  • 5 cups rhubarb (or any fruit mixture)
  • 1/2 cup sugar
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground cinnamon

Instructions:

Preheat oven to 400°F. Mix crumb ingredients. Cut cut rhubarb bars into slices and mix them with sugar, ground ginger, and ground cinnamon. Put the rhubarb mixture in an oven-proof bowl or small oven-proof dishes and put the crumb over. Bake for 25 minutes, a little less if you use smaller shapes. Serve hot or lukewarm with whipped cream.
