Tortilla Soup (Weight Watchers)

1 cup chopped onions
4 cloves garlic, minced
2 small cans, diced green chilies
1 tbsp. cumin, ground or seeds
1 ½ cups frozen corn
1 can diced tomatoes (14-16 oz)
2 cans chicken broth (14.5 oz.)
1 ½ cups cooked and shredded chicken
½ cup snipped cilantro
salt, pepper, and chili powder to taste
1 cup shredded light Mexican cheese blend
bite size tortilla chips
lime wedges or juice

Cook onion, garlic, peppers & cumin in non-stick pan sprayed with Pam. Add corn, tomatoes, broth, chicken and cilantro. Bring to boil, simmer for 10 minutes. Serve over 6 crushed chips. Garnish with 2 tbsp cheese. Squeeze lime into soup.

Makes 8 cups: 1 point per cup
With chips & cheese: 4 points per cup


To make this vegetarian, substitute 1 can of drained and rinsed black beans for the chicken and vegetable broth for the chicken broth.
