Chili with Ground Beef and Beans

Consider this a template. Adjust all amounts to your own taste

2 Tablespoons vegetable or olive oil

1 medium or large onion, diced

3 cloves garlic, minced

2 pounds ground beef (80-85% fat for flavor)

1-2 teaspoons kosher salt

½ teaspoon ground black pepper

2-4 Tablespoons chili powder (more or less to taste and preferred heat level)

1 Tablespoon ground cumin

2 teaspoons dried oregano

1 teaspoon paprika

¼ teaspoon cayenne pepper (optional)

2 to 4 15-ounce cans of beans* (see note)

1 28-ounce can crushed tomatoes

Beef or chicken broth as needed for desired consistency (thicker or soupier)

1 teaspoon apple cider vinegar (yes, it really helps the favor; don’t skip it)
