1.Break two eggs into a bowl. Stir until the eggs are somewhat broken up.
2.Add a dollop of creme fraiche or some milk. Whisk side to side vigorously until the eggs are smooth.
3.Add a dollop of butter to the egg mixture. DO NOT ADD SALT UNTIL AFTER PUT ON PLATE.
4.Preheat a non-stick skillet to medium heat.
5.Pour the eggs into the pan. Let set for 2-3 seconds, then begin gently stirring.
6.Once curds begin to form, pull the skillet from the heat. Continue stirring until no more curds appear.
7. Place back on heat and repeat step 6 until reaches desired texture.
8.Put on plate and enjoy.
